Missal Pao is a popular dish from Maharashtra, India. Missal is a spicy curry made from moth beans. The final dish is topped with crunchy sev (vermicelli-like deep-fried chickpea flour noodles), onions, lemon and coriander. It is served with a pao (bread roll) toasted with butter (we use canola spread). Served on the side is a spicy mix called Chiwda, also known as Bombay Mix – an Indian snack mix which consists of a varied mixture of spicy dried ingredients, such as fried lentils, peanuts, chickpea flour, ghatia (spicy noodles), corn, vegetable oil, chickpeas, flaked rice, fried onion and curry leaves.
